Locally known as Pai Mu Tan in Fujian, China, this tea comes from buds that have been picked and withered prior to opening. This creates a mild and smooth tea that has a delicate flavor. White teas have recently become more popular as medical evidence suggests that their cancer-fighting properties are even greater than green tea.
